I started the Skinny Snack series as a way to cure my hungered boredom, but it has quickly turned into a way of life for me. As long as these recipes keep coming to mind (or I get inspired to simplify an existing recipe), I think we should keep this going year-round. It is always important for me to feature foods/snacks that are healthy and delicious, but when you throw in easy and fast to the mix, it pretty much makes for the perfect combination. I hope you are enjoying these little recipes as much as I am!
Strawberry Summer Salad
- Arugula – a handful
- 4 Strawberries, sliced
- 1 Tomato, sliced
- Goat cheese crumbles
- Balsamic vinaigrette
- Combine all ingredients.
- Top with dressing.
- Add some halved almonds to infused some crunch to your salad.
