So here’s the story. My husband makes me eggs (2) every. single. morning. There isn’t a morning that goes by that I’m not forced to eat eggs in the morning. He tries really hard to mix things up to keep me from get bored of them, but honestly, scrambled, hard boiled, sunny side up, it’s all the same sh*t to me. Left with no choice, I’ve had to get a little creative in the kitchen and create some bomb sides to accompany these eggs. Hummus toast, labane toast, avocado toast…
But, even avo toast can get a tiny bit repetitive. Enter truffle salt, drinkable olive oil from Italy (I plan to bring an entire carry-on of olive oil home with me this summer), and some juicy lemons and you’ve got yourself a slice of heaven. Top that baby off with some fried eggs and breakfast just got reallllll interesting.
Since my avo toast is just that good, I’ve decided to share my recipe via video so you can just how easy it really is. The key: truffle salt, GOOD olive oil, juice lemons, and chili flakes. You’re welcome.
