It’s 5:00pm & almost summer; 2 things that mean 1 thing: I’m hungry. Lately (as in the last 3 months), I’ve made a habit of skipping lunch (I know, so bad of me) and having a late afternoon “snack” at 5:00pm. This leaves Paul pretty peeved, as typically when he comes home around 7:00pm we eat dinner, but with my 5:00 snack my appetite is totally shot. Between moving, working, and getting this house furnished (a whooooole different situation we will discuss another day) it’s been pretty tough to get back to my old food routine, but I am forcing the issue with one of my best solutions: Skinny Snacks.
If you read my blog last summer you know that these Skinny Snacks are just a nice way of saying a light bite that also happens to photograph well. They are easy to make, require simple ingredients, offer nutritional value, and satisfy your hunger until your next mealtime.
Today kicks off the first Skinny Snack of the season, as summer is approaching, and like I said, I need to stop eating at awkward times that ruin my relationship…I mean, appetite.
COCONUT BERRY SMOOTHIE
- 1 Banana
- Small handful of blueberries
- Small handful of raspberries
- 1/3 cup coconut milk
- Crushed ice
- Start with the crushed ice in your Ninja.
- Break up the banana, add to cup.
- Add berries.
- Pour coconut milk.
- Blend.
