I’m just about as done eating avocado toast as you are seeing avocado toast all over Instagram. Yes, it’s delicious (and if you’re still into it but want an updated version check my recipe out here), but there is such a thing as overboard on the avo toast. Never thought I’d say that, as my version has all my favorite things: avocado, truffle oil & salt, and lemon, but it was time for something new.
This toast actually came about one morning when I was pretty much out of the usual avo toast ingredients (aka I only had 1 lemon and I need about 2 for 2 people….yikes!) so I scoured my fridge for other staples always on hand (hummus, Bulgarian feta, chili powder) and began layering. I had no clue how this was going to taste but I mean, can any of those ingredients ever taste bad?! I’m sticking to a firm ‘no.’
Hummus toast is a great side with eggs in the morning or as a Skinny Snack mid-day when a simple carrot won’t cut it. It’s loaded with protein and the chili powder has Vitamin A & C in case you were wondering.
HUMMUS TOAST
- Whole wheat toast
- Hummus
- Bulgarian feta
- Heirloom tomatoes
- Avocado
- Chili powder
Spread your toast (after it's been toasted) with hummus.
Layer the avocado & tomatoes.
Add crumbled feta over everything.
Sprinkle with chili powder.
Tip: I like to drizzle avocado oil on my toast before everything to give my bread a little more moisture but I promise it tastes just as good without it. In fact, you won’t even taste it…it’s more for freaks like me who can’t eat things “dry.”
